Quick Snack: Edamame

Lightly salted edamame I had for dinner
Hey everyone!
Doesn’t that look delicious?
This type of bean is called edamame. In other words, boiled premature soybeans. Yup, the same beans that brought to you tofu and soy milk.
For all you veggie-haters out there, they actually taste way better than they sound. What I like to do is boil them then lightly salt them. Its really good!
The best part is that it’s low in calories, but high in fiber and protein. It also provides you with at least 10 percent of your recommended daily intake of two key antioxidant vitamins A and C. This superfood is packed with many other nutrients as well such as iron, magnesium, thiamin, and the list can just go on!
Of course, there is debate going on about soy being bad for your health due to the isoflavones, also called phytoestrogen, which are similar to estrogen. There are many conflicting debates about the effects of soy isoflavones. Excessive intake of soy can lead to a higher amount of estrogen in our bodies, which can lead to effeminacy or hormone-sensitive illnesses. But, keep in mind that too much of anything is bad for you.
I guess the bottom line is to just limit yourself to one serving of soy per day. This way, you can still enjoy the nutritional benefits of edamame.
What types of vegetables do you like to eat?
Til next time,
~A
