Hey everyone!
Today I am sharing with you a favorite go-to breakfast. Or snack. Or whatever your heart desires. Really, it’s just some food on a plate that you consume to fill your belly. But, it’s healthy and delicious. And super easy to prepare because it requires no cooking skills at all. I mean, if you can take food out of a container and slap it on a plate, I think you will rock this.
It is basically fruit and cheese, so it is super good for you and yummy.
All I did was basically scoop some delicious cottage cheese onto a plate, and arranged some cucumber slices and apple slices around it. I also sprinkled on hemp hearts on top of the cheese for some added protein! And I topped it all off with a few goji berries, which added some color to the dish as well as antioxidants and fiber. I peeled the apple because I can’t eat the skin. The pesticides and all irritates me, even when I wash it first. I like to cut up my apple into pieces when I eat it because it gives me the sense that I am eating more. Plus, this way I can scoop some cheese onto the apple slice like chips and dip, except healthier! I added cucumber slices as well because cottage cheese with cucumber slices are verrrrrry tasty, you honestly have to try it. I always have cucumber slices on hand. For those impromptu spa nights, you know? No, really, they are just very yummy and an easy go-to snack. They have pretty much replaced crackers in my diet.
Along with this meal, I had a nice big cup of hot water with lemon. I like to start each morning with that drink because I feel like it really gives me energy and helps hydrate me. Plus, lemons are amazing for detoxing your body and have an abundant amount of vitamin C and other antioxidants. I love drinking this, rather than a cup of joe. But, I down a glass of pure water afterwards because I don’t want to risk damaging the enamel of my teeth. That’s my advice to all you lemon-lovers out there! My hygienist advised me to do so, so I’m just sharing the love.

Did I not tell you this would be a super simple meal? I like to whip this up on lazy weekend mornings when I am too tired to be bothered to make an actual meal. Except this beats your usual Cap’n Crunch or Honey Nut Cheerios mornings by a long shot. It’s tasty, healthy, and super easy to put together.
